A handful of asparagus on the plate and here comes spring. Grown in the Loire Valley, Alsace and Landes, all varieties come into Anne-Sophie Pic’s culinary repertoire. The multi-star chef of the Dame de Pic likes to temper their bitterness with a note of fresh mint and a sauce that shakes up the classic sabayon.
