Good France: Café Provence

The Restaurant:

For more than 15 years, the Quillec family has owned and operated Café Provence in Prairie Village, Kansas. The casual family-owned restaurant was recently honored by Zagat as the best overall restaurant in Kansas City and named by OpenTable as one of the Top 100 restaurants in the United States. Even though they do have white table cloths, they don't consider themselves fine dining. They work with local farmers, butchers, and fine food purveyors to create distinct, delicious food that combines the fantastic culinary resources of the Midwest with classic French tradition. Just as important, their award-winning service staff delivers remarkable, unpretentious dining experiences for every occasion.

The Chef:

Chef Philip Quillec recently returned to Cafe Provence as Executive Chef after a stint at several Michelin Star Restaurants in France: L'Auberge de La Charme in Dijon, and Le Cilantro in Arles. Quillec returned to his family’s restaurant with fresh ideas and an exciting new approach to the menu, which has helped Cafe Provence to be named one of theTop 100 Restaurants in the U.S. for the second straight year. He was also named as one of the country’s top culinary talents in the inaugural edition of Best Chefs America. In addition to leading the award-winning kitchen staff at Cafe Provence, Quillec oversees menu development and preparation of our sisterstore, French Market.

Previously, Quillec worked as Chef de Cuisine at Cafe Provence, Cassis Modern Bistro in Leawood, Le Pétanque Brasserie in Buenos Aires, Argentina, and The Fairmont Hotel on the Plaza in Kansas City.

Chef Patrick and son Philip at Café Provence and French Market said that participating in Good France was important to them because they are all about promoting French culture in the United States, and have been doing so for the past 30 years. Their aim is to showcase the French lifestyle, regional products of the Midwest, and to promote France principles of high-quality, environmentally responsible cuisine.
