If he isn’t in his cookery school in Eugénie-les-Bains busy delivering masterclasses in dishes for detox, chef Michel Guérard, with his three Michelin stars, can be found at the stove, rustling up his legendary “salade folle (crazy salad)”, which earned him the reputation as the father of nouvelle cuisine. If he had three days free to do his favourite things in the local area, the chef who now calls Les Landes home would spend them like this ...
3 days in Les Landes to Share ...
I like to take my morning coffee at Ferme Lacère in Bahus-Soubiran with my friends, the Lacère family. For dinner, we’ll go to Relais de la Poste in Magescq.
3 days in Les Landes to Explore ...
I’d go for a trip on along the Courant d’Huchet in a galupe, a flat-bottomed boat that was commonly used by Gascon merchants. Then I’d go to Villa Arnaga, Edmond Rostang’s home in Cambo-les-Bains, and enjoy its gardens.
I’d play the tourist and wander the streets of Saint-Jean-de-Luz.

3 days in Les Landes to Work hard at being lazy
I’d go for a siesta in the shade of the Landes forest’s pines, and nod off to the song of the cicadas. I’d have a session of my favourite sport: dreaming.

3 days in Les Landes to Savour
I’d go and tuck into some mouchous, our Basque Country macarons, from Maison Pariès.
I’d take my friends to savour the gourmet cuisine (External link) of L’Atelier de Gaztelur in Arcangues, and recommend they take the time to soak in their surroundings, an old manor house with views of La Rhune.
3 days in Les Landes to Admire
I’d watch the sunset from the Maisons marines d’Huchet. Luxury right in the middle of the sea of dunes that make up the Landes’ coastline.
By Michel Guérard
Michel Guérard is one of the founding fathers of French gastronomy. Known for eating – and living – well, he moved to Les Landes in 1971, making his home in a little spa town called Eugénie-les-Bains.
At the Près d’Eugénie, a certified luxury Relais et Châteaux, visitors can lose themselves in the gentle torpor of the garden spa, sit down for a delicious Michelin-starred meal, and take a cookery class from the man himself.
